Cafe Cibales is an arabica coffee made by a cooperative of coffee farmers in Ciales, Puerto Rico, one of the island's most renown coffee growing regions. Cibales makes several different coffees based on local laws that govern the composition of each type.
This package we are calling "Cibales Verde" because of the color of the bag - but it is also an appropriate name because this coffee is made from 60% mature coffee beans and 40% green beans. Why green beans? The green beans (unripened) give the coffee a stronger taste with less acidity. This one has the largest percentage of unripe beans allowed by local regulations.
